You guys. This dish is everything I have been needing in my life. I made a big batch of this on Sunday, and used it as my lunch for the week. I could have eaten it for every meal!
My sister got me a spiral slicer for Christmas, so I was able to put it to the test for this recipe. If you don't have a spiral slicer, you can use a regular slicer too. Also, you can adjust the ingredients as needed depending on how much you want to make.
- peeled and cooked shrimp
- 3 zucchini (sliced in spiral form or how you prefer)
- pint of cherry tomatoes
- olive oil for the pan
- garlic powder to taste
- black pepper to taste
- onion powder
- juice of 1 lemon
- fresh basil (a handful or so)
First, I spiralized my zuchinin to makes zoodles :)
Then, I put a little olive oil in a medium heated pan, and placed my shrimp in the pan. They are precooked, so I didn't have to keep them sizzling too long - just a few minutes on each side. Sprinkle with black pepper, garlic powder, and onion powder.
Next, I added the tomatoes and lemon juice. I let all of that simmer until the tomatoes became a little soft.
After that, I mixed the zucchini noodles in with the shrimp mixture, and sprinkled a little more of the seasonings over everything. Lastly, add the basil, and mix everything together until nicely coated.
That is it! Simple, quick, healthy, and DELICIOUS!! Give it a try and let me know what you think!
