There are several variations of making tortilla roll-ups into delicious bite-size appetizers. One of my all time favorites are the Peanut Butter Pinwheels - I make those quite often actually. This time I tried switching things up and used completely different ingredients - they turned out to be a huge hit!
4 oz cream cheese, softened (I used reduced fat)
3 Tablespoon of your favorite salsa
1/2 cup Mexican shredded cheese
1/4 teaspoon chili powder
4 (6 inch) flour or whole wheat tortilla
- Mix cream cheese and salsa - spread onto tortillas
- Top with remaining ingredients
- Roll up tortillas tightly
((I usually refrigerate overnight to make them easier to cut, but it is not necessary))
- Cut each tortilla crosswise into even bite-size slices
I tripled the recipe, as you can see in the photo below.
