I have experimented with a couple different cauliflower dishes before, but this was a new one for me. I am a sucker for anything pizza-ish :) (See Cauliflower Pizza Crust and Cauliflower, Kale, and Sausage Casserole)
This is a great low-carb option. Plus, it is easy to make and provides delicious leftovers too!
You could even try to spread a little pizza sauce under the layer of mozzarella if you would like a more authentic “pizza” flavor!
