I remember when I was younger, my mom had a killer stuffed peppers recipe. I even asked her for the recipe soon after I got married. She actually used to chop up the peppers and make it into more of a casserole, which was delicious!
Unfortunately, that recipe is made with rice. So, now that my husband and I are journeying into Paleo, it didn't fit into our meal plan.
But hey - who needs the rice anyway? Here is a version of stuffed peppers - Paleo approved. I have a feeling this dish will be making it into our meal plan rotation quite often!
Paleo Turkey Stuffed Peppers Recipe
- Pre-heat to 450 degrees F.
- Brown the ground turkey then add marinara sauce and spices. Let simmer for the flavors to incorporate.
- In the meantime, take the tops off the peppers, slice them in half and de-seed them. Place peppers in baking dish.
- Distribute the cooked turkey mixture evenly to the halved red peppers, and bake for 25 minutes.
