I know it is summer and a hot soup might not sound appealing, but with the several rainy days we have had I couldn't help but whip up some soup. It's one of those recipes where you can toss everything in the crockpot in the morning, and it's ready to eat by dinner time.
2 skinless boneless chicken breasts
2 handfuls spinach
1 sweet potato, peeled and diced into chunks
1/2 white onion
3 large carrots, diced
2 garlic cloves, minced
season to taste
1 cup water
2 cups reduced sodium chicken broth
Place all ingredients in the crockpot and cook on low for 6-8 hours.
