I know that overnight oats is one of those 'recipes' that the ingredients can really be whatever you want, but after experimenting with a few concoctions, I found one that has become my go-to. So, of course, I want to share it with you :)
For those of you who are not familiar with overnight oats - basically, what you do is soak your oats overnight in some sort of liquid. It could be milk, water, or even yogurt. Once you get to them in the morning they are nice and creamy. There is no baking involved whatsoever. The refrigerator does all the work. I use a Ball jar to soak my oats and other ingredients overnight.
1-2 tablespoons of almond butter
1/2 banana - chopped (could be frozen or fresh)
a few frozen blueberries
1/2 cup oats
1/2 - 3/4 cup unsweetened almond milk
spoonful of Greek yogurt
pinch of cinnamon1 tablespoon chia seeds
1 tablespoon flaxseed
Stir, put lid on jar, and place in the fridge overnight
Eat cold the next day
After it soaks you can add neat toppings like granola, chocolate chips, cereal etc.
Side note: I have no idea why I picked the largest jar in my cabinet.
Again, you can alternate this so many ways with different nut butters, fruits, etc. Making overnight oats has saved me a lot of time in the mornings and has helped to make sure I get a filling breakfast!
