- 1 cup dry oatmeal
- 1/2 cup almond butter
- 1/2 cup ground flaxseed or wheat germ
- 1/2 cup chocolate chips (optional)
- 1/3 cup honey
- 1 T chia seeds (optional)
- 1 t vanilla extract
Stir all ingredients together in a medium bowl until thoroughly mixed. If it is too dry, feel free to add more peanut butter or honey. And if it is too moist, you can always add more oats or flaxseed. Let chill in the refrigerator for 30 minutes. Once chilled, roll into balls of whatever size you would like. Store in an airtight container and keep refrigerated.
The great thing about this recipe is because there is no baking needed, several substitutions can be made based off what you like. For instance, you could add dried fruit or nuts. Enjoy!
