We so enjoyed this easy week night meal in the crockpot. It is super healthy and paleo-friendly as well. This made enough for lunch leftovers too, which is always a plus!
- 1 pork loin
- sweet potato - cut into bite size chunks
- favorite veggie mix - we used broccoli/carrots/water chestnuts/carrots
- favorite seasoning - garlic, onion powder, pepper
Put all together in crockpot - with pork loin on the bottom - and cook on low for 8 hours
