Ok, so I might have hit the most lazy cook of all time status, but I made baked potatoes in the crockpot for the first time. They turned out great!
First, I poked the potatoes with several holes and placed them in the crockpot. I cooked them on low for 8 hours.
By the time I got home in the evening, the potatoes were done, and I began to prepare the toppings. I seasoned and browned the grounds beef. Then I sliced open the potatoes and mashed up the potatoes inside a tad. Finally, I scooped some of the cooked meat on top of the potato along with some other scrumptious toppings.
Our toppings of choice: ground beef, bacon, guacamole, salsa, and black olives.
Super easy and filling dinner!
Side note: Some Paleo followers do not count white potatoes as Paleo. There are several articles out there you can read about this, if you are interested. For me, my body, and my current nutrition program - white potatoes every now and then are OK. For those of you who cannot or do not want to have white potatoes, you can easily swap them out for sweet potatoes, even in this dish!
