I feel funny even calling this a recipe, but I wanted to share it with you because it has been a go-to for me in the kitchen lately. I have used it as a side and even as a topper on meat or salad.
All you need is diced tomato, diced avocado, olive oil, sea salt, and pepper. Use the seasoning to your taste and depending how many tomatoes and avocados you use. In the photo above, I used 1 tomato and 1 avocado. Just gently mix all of the ingredients together, and enjoy this light and healthy dish!
