It is easy to get a little burnt out on the same old veggies for dinner, so I decided to incorporate more salads instead of just straight veggies. This recipe is a great way to add a little piz-zaz to a normal spin on salad - and it is paleo!
Cook and slice asparagus (400 degrees F for about 12 mins - season how you prefer)
Toss arugula with asparagus - add tomatoes
Drizzle with olive oil - mix all together until evenly coated with olive oil
Optional - top with feta cheese crumbles (not paleo)
Serve with your choice of meat, or eat it by itself. Either way it is delicious, light, and healthy!
